Stanford Family Recipe

Each recipe on our website comes from the Stanford Family’s cookbook that can purchased in the office by either cash or check for $10. ALL funds go to the HOPE Community Project!

Zucchini Chocolate Cake

  • 3/4 cup butter
  • 2 c. sugar
  • 3 eggs
  • 2 1/2 c. flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 c. cocoa
  • 1/2 c. buttermilk
  • 2 c. shredded zucchini
  • 1 c. chopped pecans
  • 2 tsp. vanilla

Cream butter and sugar. Add eggs, one at a time. Sift together flour, baking powder, baking soda, cinnamon, and salt. Mix we and dry ingredients together. Stir in cocoa, vanilla and buttermilk. Fold in zucchini and add pecans. Bake in greased and floured sheet cake pan at 350 degrees for 30 to 35 minutes.
