Stanford Family Recipe
Each recipe on our website comes from the Stanford Family’s cookbook that can purchased in the office by either cash or check for $10. ALL funds go to the HOPE Community Project!
Spicy Chicken Vermicelli
- 4 T. Butter
- 1 onion, chopped
- 6 chicken breasts, cubes in bite-size pieces
- 2 cans Mexican-stewed tomatoes
- 1/2 tsp. baking soda
- 1 lb. mild Mexican Velveeta cheese, cubed
- 8 oz. vermicelli noodles, cooked
Melt butter in skillet and sauté onion. Add chicken and sauté 5 to 10 minutes. Add tomatoes and bring to a boil. Sprinkle baking soda over tomatoes and stir to blend. Add cheese and stir until melted. Combine mixture with vermicelli and pour into 2-quart baking pan. Bake, uncovered, at 350 degrees for 15 to 20 minutes. Serves 4-6. Enjoy!
